End of Year Winter Wedding Cakes


2016 is right around the corner, although a flurry of winter, Christmas, and New Year’s weddings still have to be completed to ring out 2015. There is something incredible about winter weddings even though summer and spring events are still probably more popular. Winter might never pass the other seasons as the favored time frame, although this is probably due to the risk of horrible weather more than lack of ideas, but many couples still choose to celebrate their special day in the midst of greenery, holly, snow, and ice.

Winter wedding cakes in 2015 are not just festooned with snowflakes and silver dragees, although those sparkly decorations are certainly appropriate. Winter cakes touch on many aspects of the season beyond the snow. You might be surprised about what works on a winter wedding cake.

Some of the emerging trends for 2016 are sneaking into the end of 2015 on wonderful winter cakes. One which works beautifully with a cold and ice theme is metallic.

2016 will see many metallic accents on cakes, so why no festoon your winter cake with sparkling silver icicles or shimmering blues and golds. There is a vast assortment of edible metallic papers or edible leaf which can be used to completely cover a cake. You can pipe or apply other colors right on top of these coverings for a truly magical look.

Another popular trend in wedding cakes at the end of 2015 and into 2016 is nature themed decorations. Structured cakes are being replaced by confections that resemble cut logs (white chocolate covering all around with black patterning for birch bark), dry grasses, green boughs, and pinecones.These design elements can be real or made from fondant. You can create a beautiful cake by wrapping a plain white iced tiered cake in long dry grasses and adding a few red berries where the grass bunches.  Some couples are even creating drifts of “pine needles” with fondant and royal icing to scatter on the cake table. This nature trend obviously can include a snowy look created with a fine mesh metal sieve or sifter and a bag of simple icing sugar. Let it snow!

Interesting cake toppers can make your winter wedding cake stand out and shine. You can have pairs of birds wearing pink and blue toques, his and her snowmen made out of fondant, pretty snowflake cookies, or real pinecones dressed in a lacy veil and bow tie. These unique ideas create a cake that reflects who you are and the joy of the season.

Winter wedding cakes can still be covered in flowers as well if you have your heart set on them. It might be a little out of place to have a full cascade of summer blossoms but if you must have daisies or asters, why not sugar them to create a breathtaking frosted look. White roses and cream colored flowers are also lovely on winter cakes. There is no wrong choice if the finished design makes your day special.
