February 27th is National Strawberry Day!
I love a good bundt cake, and this recipe is perfect for this food holiday because it celebrates strawberries in two ways. There is strawberry yogurt in the cake itself and, of course, the cake is garnished with beautiful fresh strawberries! The strawberry yogurt makes for a fantastically moist cake while infusing strawberry flavor into every bite.

This bundt cake comes out of the pan beautifully and doesn't need any sort of glaze or frosting. You can certainly dust with powdered sugar, if desired. For show stopping presentation, fill the middle of the bundt cake with fresh strawberries and pile them high. As you slice each piece, place a fresh strawberry on each plate. This dessert also tastes great with a dollop of whipped cream, a scoop of ice cream, or even spoonful of additional strawberry yogurt on the side.
Strawberries are not only gorgeous and delicious, they are jam packed with health benefits. The red coloring contains anthocyanins which boosts short term memory and can help burn stored fat. Flavonoids in strawberries lower your risk of cardiovascular disease, while the biotin in these beautiful berries offers anti-aging qualities.

What You'll Need
1 cup (2 sticks) melted butter
1 1/4 cups sugar
1 1/4 cups strawberry yogurt
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
Fresh strawberries, for garnish
How to Make It
In a small saucepan, melt butter and cool slightly.
[post_ads]In a large mixing bowl, combine melted butter and sugar. Add yogurt and vanilla extract, mix to combine.
In a medium bowl, combine flour, baking soda, cinnamon and salt. Gradually add flour mixture to wet ingredients. Mix to combine.
Pour the batter into a greased and floured bundt cake pan. Bake at 350 degrees F for 45 minutes or until a toothpick inserted comes out clean.
Cool in pan 15 minutes before inverting on a wire rack to cool completely.
