- 2 cups plus 3 tablespoons whole wheat pastry flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup (1 1/2 sticks) butter
- 3/4 cup buttermilk
- 1 large egg
- 1/2 cup maple syrup
- 2 apples, peeled and sliced
- 2 tablespoons dried currants
- 1/2 cup coarsely chopped walnuts
- 1/2 cup maple sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon nutmeg

- Preheat the oven to 375°F. Butter a 9 ✕ 9-inch baking pan.
- In a large bowl, whisk together the flour, baking soda, and salt. With your fingers or a pastry blender, cut in 1/2 cup of the butter until the mixture resembles coarse crumbs.
- In a small bowl, combine the buttermilk, egg, and maple syrup. Pour into the flour mixture and beat just until smooth. Pour the batter into the baking pan. Arrange the apple slices on top. Sprinkle the currants and nuts evenly over the apples.
- In a small saucepan, melt the remaining 1/4 cup butter. In a small bowl, combine the maple sugar, cinnamon, cloves, and nutmeg. Sprinkle the sugar mixture over the fruit and nuts, and drizzle with the melted butter.
- Bake for 25 minutes, or until a toothpick inserted in the center of the cake comes out clean. Let cool slightly before cutting and serving.
