Magic cake has actually been around for years,
but I've been noticing these miraculous recipes that transform one
easy-to-make batter into three distinct layers popping up all over the
internet recently, showing up everywhere from Instagram to Pinterest.

So what makes this cake so magical? No, drugs aren't involved. But there is
food wizardry at work here. From one batter baked in one pan, you get
three distinct layers of cake: a spongy layer of cake on the top, a
creamy custard in the middle, and a dense fudge-like layer on the
bottom.

While magic cake uses normal cake ingredients —
eggs, sugar, butter, flour, and milk — the "magic" comes from how you
combine them. The thin, crepe-like batter is baked at a low temperature
(think 325 degrees), which gives the ingredients time to separate into
the three layers as it bakes. You get the fudge-like texture on the
bottom from mixing the egg yolks and flour together, and the middle
turns into custard because the milk-to-flour ratio is higher than in
most cake recipes. And that fluffy cake layer on top? That comes from
the whipped egg whites floating to the top of the batter and baking
last.
