When I say I'm not much of cake person, I mean it. There won't even be cake at my wedding, which everyone gave
me a hard time about — including a hairstylist during a trial. Yellow,
chocolate, vanilla, it doesn't really matter. Cake just doesn't really
do it for me. BUT, I love to decorate it, which as a food editor, I get
to do a lot. (Don't worry. I promise every recipe I share is approved by
the greater cake-loving Delish team.)

This
Caramel Apple Cake is my masterpiece. It's dramatic and over-the-top,
but in a very rustic and autumnal way. And while it looks absolutely
insane, it's easy (enough) to pull off. All you need is a vision … and
some good jarred caramel.
Start by baking two cake
rounds. Seeing as it's getting topped with apples, spice cake mix made
the most sense to us. (But we could never refuse somebody chocolate.)
While the cakes are baking, make some ganache. By now you know the
drill: Pour hot cream over chocolate and stir until smooth and sexy.

After the ganache, comes the caramel buttercream. The recipe starts out looking very similar to our basic vanilla buttercream — butter, powdered sugar and vanilla — but there's some caramel and lots of cinnamon. Whipped together, it's out of this world.
The
caramel apples on top aren't exactly practical, but they're what make
the whole thing so stunning. So get over it. Even I, the cake Debbie
Downer, couldn't refuse a slice.
