Caramel apples are one of our favorite treats, but let’s face it: They’re a real pain to make. Spending hours scrubbing caramel off our countertop is not exactly our idea of a fun afternoon. These caramel apple cupcakes, on the other hand, are not only a breeze to bake but they might just be more delicious than the original.

What You Need:
For the cupcakes
- 1 package cake mix- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon allspice
- ¼ teaspoon cloves
- 1 stick softened unsalted butter
- 3 eggs
- 1 cup buttermilk
- 2 tablespoons apple butter
- 1 teaspoon vanilla extract
- 1 cup peeled, cubed apples

For the icing
- 2 sticks softened unsalted butter- 8 ounces cream cheese
- 6 cups powdered sugar
- ¾ cup caramel sauce
Step 1:
In a large mixing bowl, combine the cake mix, cinnamon, nutmeg, allspice and cloves. Mix gently with a fork.
Step 2:
Mix the butter, eggs, buttermilk, apple butter and vanilla extract in a separate bowl with a hand mixer.
Step 3:
Add the dry ingredients to the wet and mix well before folding in the apple cubes.
Step 4:
Scoop the batter into a lined cupcake tin and bake at 350°F for 20 minutes.

Step 5:
While the cupcakes are in the oven, use a mixer to combine the butter, cream cheese, powdered sugar and caramel sauce for the frosting.
Step 6:
Frost the cupcakes and top with a few drips of caramel sauce.
