Instructions
- Preheat the over to 350 degrees. Spray two 8 inch pans with nonstick spray, then place parchment paper on the bottom on your pan.
- Make your cake- start by sifting the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a medium bowl and set aside.
- Using your stand mixer, blend the buttermilk, oil, eggs, and vanilla. Slowing add the dry ingredients to the wet ingredients.
- Add the hot coffee. The batter will be pretty thin.
- Pour the batter evenly between the two pans and bake for 23-27 minutes or until a toothpick inserted comes out clean.
- Let the cakes cool in the pan about 5 minutes, then flip onto a cooling rack to finish cooling.
- While the cakes are cooling, make the frosting. Place your butter in the bowl of a stand mixer fitted with the paddle attachment. Beat on high speed until smooth and creamy.
- Turn the speed to low and gradually add the powdered sugar and cocoa powder. Mix until the sugar and cocoa are absorbed into the butter.
- Add the cream, vanilla bean paste, and salt and gradually turn your mixer up to high. Mix on high for about a 1 minutes.
- Assemble your cake by leveling your two cakes first. Place one of the cakes down on a cake board.
- Using an off-set spatula, cover the top of the cake with a thick layer of frosting. Place the other cake on top. Spread the frosting evenly on the tops and sides of the cake.
- Decorate your cake with colored frosting, chocolate chips, sprinkles, nuts, or anything else you wish to use!
Enjoy!
