Ingredients

  • 1 1/2 cups plain flour
  • 2/3 cup caster sugar
  • 2 tsp baking powder
  • 125g butter melted cooled
  • 1/3 cup milk
  • 2 eggs
  • 1/3 cup hundreds and thousands
  • 1 handful hundreds and thousands *to serve *extra

Buttercream icing

  • 150g butter room temperature
  • 1 1/2 cups pure icing sugar
  • 1 tsp vanilla extract


Method

  • Cupcakes: Line twelve 125ml (1/2 cup) muffin pans with patty cases.
  • Preheat oven to 180/160C fan-forced. Use a balloon whisk to whisk together the flour, sugar and baking powder. Make a well in the centre. Add the butter, milk and eggs. Whisk to combine. Add the hundreds and thousands. Gently stir to combine.
  • Divide mixture evenly among the patty cases. Bake for 15 minutes or until a skewer inserted in the middle of a cake comes out clean. Transfer pan to a wire rack to cool completely.
  • Buttercream icing: Use electric beaters to beat the butter and vanilla until creamy. With the beaters running, gradually add the icing sugar until white and fluffy.
  • Pipe or spread buttercream onto the cupcakes. Sprinkle with extra hundreds and thousands.
