  • 2 large eggs

  • 1/2 cup vegetable oil

  • 1/4 cup plain Greek yogurt

  • 1 tsp vanilla extract

  • 1/2 cup chopped walnuts (optional)

Instructions

Step 1

Preheat the oven to 375°F (190°C) and line a muffin tin with muffin liners.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, and salt.

Step 3

In a separate large bowl, whisk together the grated carrots, brown sugar, granulated sugar, eggs, vegetable oil, Greek yogurt, and vanilla extract until well combined.

Step 4

Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chopped walnuts, if using.

Step 5

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Step 6

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
