In the land of dessert mashups, if anything has cheesecake we're pretty much sold. To me, the ultimate cheesecake hybrid that I've ever laid eyes on is this Carrot Cake Cheesecake. We saw the concept by Cooking Classy and immediately knew we needed to try a version using my favorite carrot cake and cheesecake recipes. If you like carrot cake, you LOVE it. And I fall among the group that obsesses over it. I can thank my great grandma Floss for that.
Grandma Floss slayed many things (notably collar necklaces and
off-the-shoulder tops), but her carrot cake recipe—the one my mom must make for my dad every single birthday—is the best I've ever tried. (And I've tried a lot!)
So
the base of Carrot Cake Cheesecake is Grandma Floss' masterpiece and
the top layer is our classic plain cheesecake—and then those are topped
off with a simple cream cheese icing to make the most incredible dessert
ever.
Because when you think about it, a slice of plain cheesecake can
be kind of, well, plain. But a layer of plain cheesecake paired with a
traditional cake layer is the perfect balance. I admit that when I first
baked this I was shocked by how well it worked. I was convinced the
carrot cake layer would dry out, but it stays incredibly moist while the
cheesecake does its thing. Since you're icing the cheesecake, I didn't
worry about letting it cool slowly in the oven, so the top does crack a
little, but no one will ever see.
Prepare to be wowed.
