Lemon Torte with Raspberry Sorbet

  • 3 large eggs, separated
  • 3 large egg whites
  • 1/4 teaspoon salt
  • 6 tablespoons granulated sugar
  • 1/4 cup canola oil
  • 2 teaspoons grated lemon zest
  • 1/2 teaspoon lemon extract
  • 2 teaspoons vanilla extract, divided
  • 2 tablespoons cornstarch
  • 6 tablespoons all-purpose flour
  • 3 tablespoons raspberry 100% fruit spread, warmed
  • 2 pints raspberry sorbet, softened
  • 1 pint reduced-fat sour cream
  • 1/3 cup Confectioners' sugar
  • 2 tablespoons sliced almonds
  • 1/2 pint raspberries

Directions

Prep: 50 Minutes
Cook: 30 Minutes
  1. Preheat the oven to 350°F. Coat a 9" x 5" loaf pan with cooking spray. Line with wax paper and spray again. Dust with flour.
  2. Beat the 6 egg whites and salt with an electric mixer on high speed until soft peaks form. Beat in the granulated sugar 1 tablespoon at a time. Continue beating for 3 minutes or until stiff peaks form.
  3. Whisk together the egg yolks, oil, lemon zest, lemon extract, and 1 teaspoon of the vanilla in a medium bowl. Add a spoonful of the beaten whites and gently whisk to blend. Pour over the remaining whites. Do not stir. Sift the cornstarch and flour into the bowl. Gently fold until well combined. Spoon into the prepared loaf pan.
  4. Bake for 30 minutes or until golden and a toothpick inserted in the center comes out clean. Cool in the pan on a rack for 5 minutes. Remove the cake from the pan and cool on the rack fo
