Let's
be real: layered cakes are outdated. There's a reason why they're being
replaced at wedding with doughnut walls and candy bars. They're just
too totally expected (read: boring) and all too often dry or bland. It's
time to abolish the rule that every major life event needs a two-tier
cake. Let's make 2017 the year of giant cookie cakes!

wonderfully easier than baking an actual cake. There's no need to sift
together the dry ingredients or butter and flour a pan. And don't even
bother testing the middle with a toothpick. If you can't decide if it's
ready, just pull it. Everybody knows an underbaked cookie is one of
life's greatest pleasures.

The dough here is really
like any other cookie dough recipe. There's just a little bit more flour
than the back-of-the-bag recipe. But pressed into a round pan and baked
tall, as as "cake," you get a dense, chewy slice at least three times
thicker than your ordinary cookie. So basically it's three times as
amazing.

The only edge a
traditional funfetti confection has over the giant cookie is sprinkles.
Oh, and frosting! So add both. Rainbow jimmies should be folded into the
dough along with the chocolate chips. The frosting gets piped on when
the cookie cake is cooled to room temperature — or as long as you can
wait.
