Mitsuki Moriyasu, a Japanese food stylist at the soon-to-open VegieDeco Cafe, transforms fruit and vegetables into visually captivating desserts in an attempt to make healthy eating more appealing. We don't really think you need to disguise healthy food as dessert in order to enjoy it, but when it leads to results as pretty as this, who are we to argue? Each individual cake is a work of art created with meticulous attention to detail. Seriously, they almost look too good to eat. Moriyasu introduced these exquisite cakes to Bistro La Porte Marseille, a popular restaurant in Nagoya, Japan. Customers were so into the concept that The VegieDeco Cafe is scheduled to open in early April, and will showcase new salad cakes every season. Yum!

According to The Daily Mail, Mariyaso maximizes the health benefits of these salad cakes by using entire fruits and vegetables, including roots and peels. What appears to be the frosting is actually tofu, blended with vegetables to creating an icing like texture. The spongy part of the cake is made with soybean flower, which—by the way—is virtually sugar-free. There's a chance these cakes might in fact be healthier than your average salad. Amazing.
