The rainbow bagel is so
over already. Now it's time for the rainbow croissant. The birthday
cake croissant, an invention by pastry chef Thiago Silva, is being
tested at the Union Fare Gastrohall in New York City, and it looks
incredible.
According to The Daily Meal,
the candy-colored creation is a Funfetti-style birthday cake croissant
with a mascarpone filing, and it will be available to the public
starting Tuesday. This is the kind of creation that people will line up
around the block for, so if you miss out, you can also have a cookies
and cream, crème brûlée, peanut butter and jelly, or red velvet
croissant instead.

already has 191,000 views, and it's easy to see why. The croissant looks
like a flaky, colorful treat that is just so much fun:

But most importantly, how does this thing taste? "[Thiago is] a genius," Jessica, the Instagrammer behind Cheat Day Eats, told Foodbeast,
saying it's not as sugary-sweet as you might think. "I was kinda
surprised. He mixed the sprinkles into the batter, which [Thiago] says
[he] has never seen anyone else do."
