Streusel Topping:
- 3 1/2 tablespoons butter, melted
- 1/2 cup brown sugar, packed
- 1/2 cup flour
- 1/2 teaspoon cinnamon
Glaze:
- 1 cup powdered sugar
- 1 1/2 tablespoons milk
Directions:
- Preheat oven to 350° F. Line 24 muffin cups with cupcake papers.
- Pour the can of beans and sauce into a food processor or blender and puree.
- In a large bowl, combine the cake mix, ¾ cup of the pureed beans (discard small amount of remaining puree), 3 eggs and apple sauce and mix well using a wooden spoon or rubber spatula.
- Using a small bowl, combine melted butter, brown sugar, flour and cinnamon. Mix together with a fork until you have medium size crumbles.
- Divide batter between 24 muffin cups and sprinkle with the streusel topping.
- Bake for 13-15 minutes until a toothpick inserted into the center comes out clean. Cool on wire rack.
- Stir together the ingredients for the glaze. If glaze is too thick, add a little more milk to create a thinner consistency. Drizzle the glaze over the cooled muffins using a spoon.
- The muffins can be stored for 3-4 days in a air tight container at room temperature.
