Move over unicorns. This summer, we're all about mermaid-themed everything to inspire our food. We've already made mermaid ice cream and mermaid lemonade, but in order to throw a real party we needed a cake recipe.
Meet the mermaid cake.
Using the petal frosting technique
that's on basically everyone's Pinterest boards by now, we made our
cake look like something straight out of Ariel's grotto by tinting our
buttercream in shades of purple, teal and blue.
With a little bit of
patience, anyone who can put frosting in a piping bag can achieve this
cool mermaid-tail effect. All you need to do is pipe circles of frosting
vertically down the sides of a plain white cake and use an offset
spatula to smear the frosting circles about an inch horizontally across
the cake. Then pipe another row of frosting circles slightly overlapping
your last row of frosting smears and repeat the process until your
entire cake is covered.
While it's not exactly like taking a beach vacation, we promise this pipe and smear process is quite soothing once you get into the groove of things.
