These are sorta like a dense cake, which makes it easy to cut up and serve as bars.
White chocolate chips and/or mini marshmallows are mixed into a Funfetti cake mix, then frosted with marshmallow buttercream. Don’t forget the food coloring!

1 box yellow (or Funfetti!) cake mix
1/4 cup vegetable oil
1 egg
1/3 -1/2 cup milk
1/4 cup rainbow sprinkles; (only if you use a yellow cake mix add these in)
1/2 cup white chocolate chips; OR
1/2 cup mini marshmallows; OR Both!
Sprinkles for the top
Marshmallow Buttercream Frosting
1/2 cup butter room temp
1 cup Marshmallow Fluff
2 cups powdered sugar
2 Tbsp milk
Original recipe makes 1 Serving

Combine the cake mix, oil, and egg in a large bowl. Add the milk slowly - you want the batter to remain as dense as possible. Then mix in the rainbow sprinkles and/or white chocolate chips. (I've had great results with several possible combinations, sometimes when I want to go light on the sweeties I only use 1/2 cup of them total)
Spray pan (either 8x11" or 9x9" pan) with non-stick cooking spray. Dump batter in pan and spread to the edges. Bake for 25-30 minutes at 350F. (They will be a little soft/gooey in the middle- just let them sit for about 20-30 minutes and they will set up. But I guarantee that you will not be able to wait that long.)
Frost when cooled (optional . . . these taste amazing without frosting, but I am a serious frosting lover, so I added just a little bit).
Marshmallow Buttercream Frosting
Mix butter and Fluff until smooth on medium speed until smooth.
Slowly add in powdered sugar with mixer on low.
Add in milk and turn speed up to medium and mix until all combined and smooth.
Color frosting if desired.
Spread over cooled blondies:

Play with this recipe to your hearts desire! Some like a half and half combo of white chocolate chips and mini marshmallows, some like a whole cup of one or the other, and some even like just a half cup of one or the other. One of my friends even used 1/2 cup of peppermint bark!
