Traditional Pound Cake

Undoubtedly one of the most versatile cakes there is, pound cake fits the bill in oh-so-many ways. Serve as a dessert or for afternoon tea; try it plain or top with ice cream or fresh fruit; wrap it in decorative foil or plastic for a thoughtful homemade gift; or make several for a local bake sale--they'll sell like hotcakes!

Ingredients

  • 2 1/4 cups cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup butter, at room temperature
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon grated lemon peel
  • 1 teaspoon vanilla extract
  • 1/2 cup (4 ounces) sour cream

Directions

Prep: 15 Minutes
Cook: 55 Minutes
  1. Preheat the oven to 350°F. Grease a 9" x 5" loaf pan and dust lightly with flour.
  2. In a medium bowl, combine the flour, baking powder, and salt. In a large bowl, with an electric mixer on medium speed, beat the butter and sugar for 4 minutes, or until creamy. Add the eggs, one at a time, beating well after each addition. Add the lemon peel and vanilla extract and beat until blended. With the mixer on low speed, gradually add the flour mixture, alternating with the sour cream.
  3. Place the batter into the prepared pan. Bake for 55 minutes, or until a wooden pick inserted in the center comes out clean. Cool on a rack for 10 minutes. Remove from the pan and place on the rack to cool completely.
