For the Brownie Base

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt

For the Cheesecake Filling

  • 2 packages (16 ounces) cream cheese, softened to room temperature
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract

For the Raspberry Swirl

  • 1 cup fresh raspberries
  • 2 tablespoons granulated sugar

Step 1

Preheat the oven to 350°F (175°C). Grease and line a baking pan with parchment paper. In a microwave-safe bowl, melt the butter. Stir in sugar, eggs, and vanilla until well combined. Sift in the flour, cocoa powder, and salt. Mix until the batter is smooth and well incorporated. Pour the brownie batter into the prepared pan, spreading it evenly.

Step 2

In a separate bowl, beat the cream cheese, sugar, eggs, and vanilla until creamy. Gently spread the cheesecake mixture over the brownie layer in the pan.

Step 3

In a small saucepan, heat raspberries and sugar over medium heat until they break down into a sauce. Strain the mixture to remove seeds. Dollop spoonful of the raspberry sauce over the cheesecake layer. Use a toothpick or knife to create a swirl pattern.

Step 4

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted comes out with moist crumbs. Allow the brownies to cool completely before slicing.
